Savory Egg & Pork Casserole
This is one of those reliable, make-ahead meals we lean on during busy weeks on the farm. Simple ingredients; hearty; and just as good reheated throughout the week. All made with pasture-raised proteins to enhance nutrient-content and flavor-profile.

Ingredients

  • (1 onion, chopped) Onion
  • (1 pkg) Bulk Ground Pork
  • (Salt, Pepper, Garlic Powder, Onion Powder, Smoked Paprika (or red pepper flakes) Parsley) Seasonings
  • (1 Cup) Whole Milk
  • (4-6 cups shredded potatoes, or frozen hashbrowns (thawed)) Potatoes
  • (1 Cup) Ricotta Cheese
  • (1 cup shredded) Cheddar Cheese
  • (1 Cup Shredded) Asiago Cheese
  • (Shredded to cover top of pan lightly) Additional Cheese For Topping
  • (12 eggs) Dozen Eggs - Large
  • (1 Tbs) A2A2 Butter

Directions

  1. Preheat oven to 375°F.

  2. Sauté chopped onion in 1 tbs butter until soft. Add ground pork and brown fully. Season generously; with Seasonings (salt, pepper, garlic powder, onion powder, smoked paprika or red pepper flakes, and parsley.) Then set aside.

  3. Whisk a dozen large eggs with 1 cup of whole milk in a bowl.

  4. In a large bowl, combine shredded potatoes, ricotta, cheddar, asiago, and egg mixture. 

  5. Season to taste; then stir in pork and onion mixture.

  6. Grease a 9×13 casserole dish and pour in mixture evenly.

  7. Top with extra shredded cheese.

  8. Bake for 35 minutes, or until edges are golden and the center is firm.

    Storage Tips

    Store leftovers in an airtight container in the refrigerator or freezer. Reheat as needed and enjoy throughout the week.
