Where Our Farm Meets Their Craft

Last season, we launched something new with our friends at Virtue Cider. What started as a simple idea quickly became one of our favorite ways to bring together the people and products that make up our local food community.

The idea behind the Farm & Craft Sausage Series remains the same. A few times each year, we partner with a local producer who already uses our pasture-raised meats in their own craft. Together, we create a small seasonal batch of sausage that reflects both of our worlds.

This next release brings us into the world of local craft beer.

Our Next Collaboration: Goshen Brewing Co. | Heritage Kölsch Bratwurst

For this batch, we partnered with Goshen Brewing Company using their Heritage Kölsch, a clean, easy-drinking beer brewed just down the road in Goshen, Indiana.

Our connection with Goshen Brewing goes back years. We first met their chef, Jesse Shoemaker, at the Logan Square Farmers Market in Chicago, and after moving to Goshen we found ourselves working together again through weekly deliveries to the brewery.

Kölsch-style beers are known for being balanced, crisp, and approachable. In this bratwurst, the beer adds a gentle malt flavor and brightness that complements the richness of our pasture-raised pork without overpowering it.

The goal was never to make a “beer flavored brat.” Instead, we wanted something balanced and easy to share around a grill, campfire, backyard table, or summer gathering.

At The Heart of It All

Like every sausage in this series, the foundation starts with the pork itself.

Our heritage-breed pigs are raised outdoors on pasture with room to root, graze, and grow at a natural pace. These slower-growing genetics have been part of our farm for generations and are selected for deep flavor, hardiness, and quality.

That richness allows simple ingredients and thoughtful craft to shine without needing fillers or shortcuts.

As an added bonus, Goshen Brewing Co. will be serving these special brats during their 11th Anniversary celebration on June 6th.

Truly Small Batch • Truly Seasonal • Truly Local

This series is built around seasonality and collaboration. Each batch is made in limited quantities and tied directly to the partner and ingredients involved at that moment in time.

Once this batch is gone, it’s gone. The next collaboration will head in a completely different direction with a new producer, new season, and new flavor.

That’s what we love about this project. It gives us a chance to celebrate the people we work alongside every week and create something that reflects this region and the food culture growing around it.
