So many eggs...

How’s your New Year going? Are the resolutions, and intentions holding strong? Two weeks in, and I am happy to say that I have been cooking more often - even when I have no creative or energetic spark left in me towards the end of daylight.  We’ve enjoyed many conversations as a family over casseroles, roasted chicken-on-the-bone (as my kids like to call it) sloppy joes, and fresh salads.  

The one big-hitter from the past few days was a breakfast casserole. We all ended up eating it sporadically throughout our busy week for a snack, or dinner.  I don’t know if anyone actually ate it for breakfast - but it kept us well fueled for 2-3 days!

Our farm has an excess supply of eggs currently, so incorporating more into our diet is fitting, and health conscious. Eggs provide many needed nutrients, and are easy to consume consistently.

Why do we have so many eggs? During the farmers market season (May-October) our egg sales are booming, many times outweighing the production rate of our hens.  However, once the demand settles as the snow falls - our hens keep laying those beautiful eggs.
