Each package contains 1 Shank, averaging 1# total, vacuum-sealed for ideal freshness.
Our pasture-raised pork Osso Buco Shanks are cut longer than our standard pork shanks, giving you more meat around the bone for slow, flavorful cooking. Osso buco means “bone with a hole in it,” referring to the marrow-filled center that melts into the dish as it cooks, deepening the flavor of sauces and broths. Raised outdoors on open pasture with non-GMO feed grown on our farm, our pigs develop hearty, tender meat that turns this classic cut into a centerpiece meal.
Braise – Brown the shanks in a heavy pan, then cook in broth, wine, or tomato sauce at 300°F for 2½ to 3 hours until fork-tender.
Slow Cooker – Layer shanks with vegetables and sauce, then cook on low for 8 to 10 hours until the meat falls off the bone.
Pressure Cooker – For quicker results, braise under pressure for 45 to 60 minutes, letting steam release naturally for tender, flavorful meat.
Classic Osso Buco: Braised in tomato, wine, and aromatics, finished with fresh gremolata.

Garlic and Herb Osso Buco: Cooked with white wine, garlic, and rosemary for a lighter but still rich flavor.
