When your bacon is labeled “Uncured”, it means no synthetic nitrates or nitrites are added during the curing process. While it’s still cured, USDA labeling guidelines require the term “Uncured, No Nitrates or Nitrites Added” to distinguish it from conventionally cured bacon.
