With the bone in and skin on, it roasts beautifully and stays moist, making it a perfect centerpiece for both everyday meals and special gatherings. Raised in small groups on open pasture, our turkeys grow slowly and naturally, developing meat that is lean yet flavorful. This cut is ideal for roasting, grilling, or smoking when you want something impressive but manageable in size compared to a whole bird.

Cooking Tips

Oven Roast – Preheat oven to 350°F, season with herbs and butter, and roast for 1¾ to 2½ hours depending on size, until the internal temperature reaches 165°F.
Grill – Grill over indirect medium heat for 1½ to 2 hours, skin side up, until the internal temperature reaches 165°F.
Smoke – Cook low and slow at 250–275°F for 3 to 4 hours, basting occasionally, until the breast is tender and flavorful.
