Cut from the lower leg, shanks are full of connective tissue that melts down during cooking, creating rich, tender meat and a naturally silky broth. Raised outdoors on open pasture with non-GMO feed grown on our farm, our pigs produce meat with clean, hearty flavor. Cooking Tips

Braise – Sear shanks, then cook in broth, beer, or wine at 300°F for 2½ to 3 hours until fork-tender.
Oven Roast – Season well and roast at 325°F for 2 to 2½ hours, basting occasionally, until the meat is falling from the bone.
Slow Cooker – Place shanks with vegetables and stock in a slow cooker. Cook on low for 8 to 10 hours for melt-in-your-mouth results.
