Grilled Yogurt-Marinated Chicken Tenders with Lime, Cilantro, and Summer Sides

Directions

Our Chicken Breast Tenders are lean, flavorful, and raised on pasture with a non-GMO diet. This yogurt marinade keeps them juicy on the grill and adds a bright, fresh flavor that tastes like summer.

For the Chicken:

  • 1 lb Jake’s Chicken Breast Tenders

  • 1 cup plain whole milk yogurt

  • 2 tbsp lime juice

  • 1/4 cup chopped fresh cilantro

  • 2 cloves garlic, minced

  • 1 tsp cumin

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Skewers (if using wooden, soak in water for 20 minutes)

Instructions:

  1. In a bowl, mix yogurt, lime juice, cilantro, garlic, cumin, salt, and pepper.

  2. Add chicken tenders and stir to coat evenly. Cover and refrigerate for 2 to

    4 hours.

  3. Preheat grill to medium. Thread chicken onto skewers and grill for 8 to 10 minutes, turning once, until fully cooked and lightly charred.

Serve with:

Steamed Rice:
Plain, jasmine, or coconut rice all work great as a base.

Simple Summer Salad:
Fresh greens with tomatoes, cucumber, and a vinaigrette made from olive oil, vinegar, salt, and pepper.

Quick Pickled Cucumber and White Onion Salad:

  • 1 cucumber, thinly sliced

  • 1/4 white onion, thinly sliced

  • 1/4 cup vinegar (white or apple cider)

  • 1 tsp sugar

  • 1/2 tsp salt

Mix everything in a bowl and let sit for 15 to 30 minutes. Chill before serving for the best flavor.

Yogurt naturally tenderizes without breaking down the meat too much, thanks to its gentle acidity. It also helps lock in moisture and carries flavor right to the surface, giving grilled chicken a great texture and taste.
