Grilled Pork Steak: A Juicy Alternative
If you haven’t grilled a pork steak before, you’re in for a treat. Cut from the pork shoulder, these steaks are richly marbled, deeply flavorful, and perfect for grilling. Unlike leaner cuts of pork, our pork steaks have a natural tenderness and juiciness that make them stand out.

Welcome to Daryn's Backyard! Recently, I grilled one of our pasture-raised Pork Steaks alongside a high-quality locally raised Ribeye to compare the two. The results? Visually, the color was very similar—proof that the way we raise, feed, and care for our animals impacts the quality of the meat. Flavor-wise, while pork and beef each have their own signature taste, our pork steak holds its own. It's not “the other white meat” as the old slogan said—this is real pork, with deep, rich flavor.

For us at the farm, our beef supply is limited at times, and pork steak makes an excellent alternative at about a third of the price. If you’re looking for a budget-friendly, grill-worthy cut that delivers on taste, pastured pork steak is a great option.

How to Grill a Pork Steak

  1. Season – Keep it simple: salt, pepper, and a little oil. Or go bold with your favorite dry rub.
  2. Room Temperature - Before cooking a pork or beef steak on the grill, allow it to reach room temperature. This reduces the time on the grill, ensuring you don't dry out your steaks.
  3. Preheat the Grill – Medium-high heat is best. You want a good sear without overcooking.
  4. Hydration - Grab your preferred grilling beverage. Today I enjoyed a beer from our friends at Goshen Brewing
  5. Grill – Sear for 3-4 minutes per side, then move to indirect heat and cook to an internal temp of 140-145°F.
  6. Rest – At Least 10-15 Minutes – This step is critical. Resting lets the juices inside the meat redistribute, keeping it tender and juicy instead of running out onto the plate. This is true for both beef and pork steaks. When meat comes off the grill, it’s still holding onto a lot of heat. If you slice into it too soon, the juices rush out, leaving the meat drier than it should be. A solid 10-15 minutes of resting time allows the muscle fibers to relax and reabsorb that moisture. You’ve put in the effort to grill it right—don’t skip this step.
  7. Enjoy – Slice it up and serve. Add a little finishing salt if you'd like! (I do!)
