Directions
What You’ll Need:
For the pork tenderloin:
- 2 Jake’s Pork Tenderloin
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tbsp Jake's maple syrup
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 tbsp Jake’s Butter (for searing)
For the roasted delicata squash:
- 2 delicata squash, halved, seeds removed, and sliced into half-moons
- 2 tbsp olive oil
- ½ tsp salt
- South of France spice mix
- Black pepper, to taste
For the mushroom & rice:
- 1 cup long-grain rice or wild rice blend
- 2 cups Jake’s Bone Broth
- 2 tbsp Jake’s Butter
- 8 oz mushrooms, sliced (cremini or shiitake work well)
- 1 small onion, diced
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
How to Make It:
1. Marinate the Pork Tenderloin
Whisk together olive oil, Dijon, maple syrup, garlic, salt, pepper, smoked paprika, and thyme. Coat the pork tenderloin and let it marinate for at least 30 minutes (or overnight for deeper flavor).
2. Roast the Delicata Squash
Preheat oven to 400°F. Toss squash slices with olive oil, salt, and Spice Mix. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway through, until caramelized and tender.
3. Cook the Mushroom & Rice
In a saucepan, melt butter and sauté onion and mushrooms until soft. Add garlic, salt, and pepper, then stir in the rice. Pour in Jake’s Bone Broth, bring to a boil, then cover and reduce to a simmer. Cook until rice is tender, about 15-20 minutes. Let it sit for a few minutes before fluffing with a fork.
4. Sear & Roast the Pork Tenderloin
- Heat a cast iron skillet over medium-high heat. Add butter and sear the pork on all sides until golden brown (about 2 minutes per side).
- Transfer the skillet to the oven and roast for 10-12 minutes, or until the internal temp reaches 140°F.
- Remove from the oven and let the pork rest for 8-10 minutes before slicing.
5. Serve & Enjoy!
Plate up slices of juicy pork tenderloin with the roasted delicata squash and a scoop of mushroom rice. The mix of smoky, sweet, and savory flavors makes this meal feel special, whether it’s a weeknight dinner or a weekend feast.
