Easy Layered Chorizo Casserole

Looking for an easy dinner after a long day? This easy Taco Casserole is perfect! With just a handful of simple ingredients, including Jake’s Country Meats chorizo, this dish comes together quickly. Just layer, bake, and enjoy a delicious meal that's sure to please everyone at the table.
Directions
Ingredients:
- Corn tortillas, cut into strips
- 1 jar of your favorite salsa
- 1 lb Jake's Country Meats Chorizo (Found here)
- 1 onion, diced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 2 tomatoes, chopped
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Prepare the Chorizo: In a skillet over medium heat, brown the chorizo with the diced onion until fully cooked. Drain any excess fat.
- Assemble the Casserole:
- Spread a layer of salsa on the bottom of a baking dish.
- Add a layer of tortilla strips over the salsa.
- Evenly spread the browned chorizo and onions over the tortillas.
- Add a layer of black beans, followed by corn, and chunks of tomatoes.
- Spoon some salsa over the top and sprinkle a layer of cheese.
- Repeat Layers: Repeat the layering process: tortilla strips, chorizo mixture, black beans, corn, tomatoes, salsa, and cheese.
- Bake the Casserole:
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
- Serve: Let the casserole sit for a few minutes before serving. Enjoy with a side of fresh salad or a dollop of sour cream if desired.
